Momen means “cotton,” although there is nothing fluffy about this tofu. The term “Momen” derives from the cotton cloth that was traditionally used to press out the water from the tofu, and does not refer to the texture. Momen tofu is firm, dense, and with a coarse texture and can withhold its shape even when cooked.
